These premium belly fillets of the yellowfin tuna have a deep, velvety texture and are what is known in sushi bars as “toro”. Almost pink with purpley specks, the ventresca has buttery, complex flavours and because it is the fattiest part of the fish, it is also the most tender; not to mention the tastiest. These ventresca fillets can be served as an appetizer, either on their own or complimented by a selection of Spanish artisan breads. Arroyabe has produced artisan fish conserves for over 100 years, from the small fishing town of Bermeo in the province of Biscay. Cut, filleted, and packed completely by hand, all Arroyabe’s tuna products are produced on a small scale, and fished using dolphin-friendly methods.
