Jaime Carlos Carvajal de Castrillon spent 25 years working with Gonzalez Byass and has also collaborated with Bodegas Barbadillo and Delgado Zuleta. He formed his own company, Carvajal SA, in 2014. He has two different focuses in his business – table wines and also fortified sherry wines. His range of sherries are chosen from barrels in the cellars of Delgado Zuleta which he hand picks and bottles without filtration – “en rama”.

This amontillado is aged for around 8-10 years. Notes of sweet orange and walnuts with some toffee and butterscotch sitting in the background and a subtle pungency of flor spiking through.
