Chorizo slow braised in El Gaitero cider.
This classic dish originates from Asturias, found in the Northern part of Spain. This humble, rustic tapa is the perfect flavour bomb to show off at that next get together.
Ingredients:
360g Arbizu chorizo Oreado
200ml El Gaitero Cider (100ml to drink while cooking)
1/2 red onion *
1 minced garlic clove *
1 bay leaf *
100ml meat stock *
1 fresh baguette
Tablespoon of Maimona olive oil
*these items are the ones you need to pop to the shop to grab or maybe they are knocking around in the pantry
Method:
Method
- Add the 50ml of olive oil to a large pan, heat gently, then add in the sliced red onion and the minced garlic.
- Lightly caramelise the onions and garlic, and then add the fresh thyme and bay leaf
- Now add in the star of the show, the chorizo! Leave them whole and cook them until the oils ooze out and begin to softly brown
- Now add in the 200 ml of Asturian cider and your meat stock.
- Now grab that last drop of cider and do the washing up while you leave the liquid to reduce to half and the chorizo become soft
- To serve, grab a big cazuela (can be purchased here) and slice up some fresh bread.
